Garden Goodies | Refrigerator Pickles

One of the beautiful aspects about owning your own business is the fact that you have flexibility in setting your own hours and booking your calendar!  I try my hardest to plan things out accordingly in January (the off-season for photographers) and map out my year.  There is one time of year that I have to mentally prepare myself for and that is the harvest of our summer garden!  It can become somewhat overwhelming if I’m covered up with business as well; but someone has to do it! Eating as healthy as possible is one of our priorities in this family; and we prefer to grow it ourselves and stock up for the winter.  I’m slowly learning the ropes of canning/ freezing/ and preserving our goodies.  As daunting as it is right now, it brings me such fulfilment in the winter when I can pop open a jar of canned tomatoes, or a bag of frozen greenbeans, or even a jar of fig preserves! Another thing I’ve been forced to figure out is how to make pickles, due to my hubby’s love for planting cucumbers! Sometimes I think we go a little overboard when planting, but it always works out– either not enough rain, or like this year TOO much rain usually lessens the crop to just the right amount for us.

So I say all that to say… I’ve been confronted by many who are interested in how I make pickles. 🙂 Now… being home with a 4 year old as well puts a major time constraint on things such as canning/ gardening in general, so I’ve discovered the beauty and ease of refrigerator pickles. No canning required!  The only downside to it is, is the need for refrigerator space!  There are two kind that I’ve started making: dill slices and bread & butter slices.  The recipes are below! Enjoy! Find out refrigerated shipping cost if you are carrying canned food along.

Refrigerated Dill Slices

  • 8- 1/4 cups sliced, pickling cucumbers
  • 2 cups white vinegar
  • 2 cups water
  • 6 tbsp pickling salt (I cut this to 4.5 tbsp, to cut down on some of the saltiness)
  • 1/4 cup sugar
  • 2 tbsp pickling spice (I omitted this because I don’t have any. lol)
  • 7-1/2 tsp dill seed or weed
  • 5 tsp mustard seed
  • 1-1/4 tsp whole black peppercorn
  • 5 cloves garlic, halved (optional)

Place cucumber slices in a large glass bowl and set aside. Combine vinegar, water, pickling salt, sugar, and pickling spice in medium saucepan. Bring to a boil over med-hi heat, stirring to dissolve sugar and salt. Reduce heat, cover, and boil gently for 10 minutes. Pour pickling liquid over cucumber slices. Cover with lid and set aside until cooled to room temperature, about 30 minutes. Place 1-1/2 tsp dill seed or weed, 1 tsp mustard seed, 1/4 tsp peppercorn, and 2 garlic clove halves in each pint jar. Add cucumbers leaving 1/2 inch headspace.  Ladel pickling liquid into jars, leaving 1/2 inch headspace.

Allow them to marinate for 2 weeks before using (although I always can’t help but to taste test them before then!) Yields about 2 quart jars. Use within 5 months.

 

Refrigerated Bread and Butter Slices (thanks to my dear friend Carrie!)

  • 4 cups sugar (I found this to be a little much for our liking, so I cut it back a bit!)
  • 4 cups cider vinegar
  • 1/2 cup canning salt (I also found this to be a little much too so cut back on it a bit!)
  • 1-1/4 tsp turmeric
  • 1-1/4 tsp celery seed
  • 1-1/4 tsp mustard seed

Mix all ingredients but do not heat. Slice 8-10 cucumbers thin. Also slice 3 onions thin. Layer the cucumbers and onions in jars or containers that have lids. Pour vinegar mix over it. Refrigerate for 5 days before using. Keeps up to 7 months! Yields 2 quart jars.

Our old-soul, mancub hit a milestone birthday this summer. So, as an early birthday present, we hesitantly (😅) decided to take him and a friend to a Hank Jr. concert, since they are both big fans. Our thought process: “Hank Jr. is old now… sure his music is timeless, but it’s bound to draw an older, more calm crowd nowadays.” NOPE. 😆🥴 

The trip morphed into a group trip with the friend’s parents and sister, and my dad joined us, too! All was well until a thunderstorm sent everyone to the concessions area where we were packed in like sardines for TWO HOURS to avoid the lightening and rain best we could. 😳 Well, you can only imagine most people there had only one thing to do during the two hour wait, so that by the time we could return to our seats, it was quite the scene. 🙈 Our sweet, sheltered homeschooled children were awakened to some of the ways of the world that night, for sure. 🤣🥴 Gracious!!! 

But alas, Hank came out on stage and was GREAT, even still as an older man in his 70’s. He played alllll the instruments, and even still could throw his leg up on the piano! 🤣😳

The boys ended their first year of fishing for PAC last April in 10th place; which was amazing for them! They overcame many obstacles and learned to fish better as partners. This particular tournament happened to fall on Jason’s birthday (he’s their boat captain), so our friends camping close-by helped him celebrate. 🤣😁

In April, we ventured to Beaufort with my family to see the Blue Angels in action. 🤩 They were awesome to see in person!

Anytime we vacation, you can bet fishing and/or hunting will always be interspersed. 🤪 So, it’s a good thing I enjoy just being outdoors, walking creek and river banks, and taking pictures. But there *was* one said adventure where I thought for sure I was going to end up nose-to-nose with a grizzly, mountain lion, or moose. 😅 And it was cold and raining. lol 🫠 But we made the most of it! 

We also spent some time playing on one of the nearby lakes. We all even braved the cold water! 🥶🤣

We checked out one of the waterfowl viewing areas and grabbed pizza at our favorite little roadside restaurant where the kiddos love to play pool and Pac-Man. 🤣

Our next Montana adventure was a beautiful hike! Can’t go to Montana without putting in some steps. 😁 And it’s always the best when the hike includes amazing views along the way. It’s no big deal to pass people hiking and everyone has pistols strapped to their chests. Just an observation- which I don’t mind one bit. After all, we were in grizzly/ mountain lion/ moose country.  You can see on the wilderness sign that grizzlies have clawed it and bitten chunks out of it. 😅 I learned that the huge rock fields we passed attract grizzlies, where they source a certain type of moth for nutrition. They can be heard at times, flipping boulders in search of those moths. 

We also had our little sidekick Pippa along on the adventure, too! We fell in love with that little doggo while there. 🥰 And found an awesome patch of huckleberries rambling around on the national forest. They are SO. GOOD! So very thankful for the Cole family adventuring with us!

We arrived in Montana Aug. 1 and re-connected with our friends, who were so gracious to host us while visiting. (Seriously, so blessed! 🙏) Jason met Seth back in 2005ish through work, when both couples lived in Tennessee, and hit it off instantly. We have remained friends through having families, and moving in different directions, and now our kiddos have been able to grow up knowing each other.  Couples friends are hard to find in life and we don’t take that for granted!

The first adventure was a ride on the road up the mountain behind their house. Holy moly what a view, right in their backyard, basically! 😱
